Ingredients

  • 1 can black beans drained and rinsed

  • 2 cups sweet corn cooked

  • 1/2 red bell pepper diced

  • 1 cup cucumber cubed

  • 1 cup tomatoes. diced

  • 1 cup red onion diced

  • 1 small jalapeno pepper diced

  • 1/4 cup fresh cilantro chopped

  • Juice of 1 lemon

  • 3 Tablespoons olive oil

  • 1 Tablespoon red wine vinegar

  • 1 teaspoon cumin

  • 1/2 teaspoon chili pepper

Directions

  • In large bowl toss together beans, corn, bell pepper, tomatoes, onion,
    jalapeno pepper, and cilantro.
  • In a small bowl whisk together lemon juice, olive oil, vinegar, cumin,
    and chili pepper.
  • Add dressing to the salad, stir to coat.
