Ingredients

  • 1 Tbsp butter

  • 1 clove garlic, grated

  • 1 cup quinoa

  • 2 cups chicken broth

  • 1/4 cup lemon juice

  • 1 cup grated cheese (I used cheddar)

  • 1/2 cup mozzarella cheese, shredded

  • 1 Tbsp parsley, diced

  • 1 Tbsp basil, diced

Directions

  • Add clove and butter to small pot over low heat.
  • Add in quinoa, chicken broth and lemon juice. Bring liquid to a boil and then turn heat down to low and cover. Let it cook for 5-10 minutes, or until quinoa is soft and fluffy and absorbs water.
  • While quinoa is cooking, grate your cheese.
  • Once quinoa is done cooking, add cheese and stir in herbs. If desired, add extra cheese and herbs to top.
